Chicken and Sausage Jambalaya

.5 c chopped onion.5 c chopped bell pepper1.5 c canned diced tomatoes1.5 c cubed chicken (about 1/2 inch cubes)6 oz. sliced sausage1 tbsp. extra light olive oilMrs. Dash to tasteSalt & Pepper to taste
Saute chicken in olive until golden brown on both sides then set aside. Place onion and bell pepper in skillet (leave chicken droppings) and saute. When it becomes almost transluscent, set aside. In a large pot, combine, sauteed vegetables, chicken, sausage, salt, pepper, diced tomatoes and rice. Bring to a boil, cover, and reduce heat to medium low. DO NOT uncover the pot for 20 minutes. After 20 minutes, check the mixture. It may need longer cooking time depending on the stove. This makes 5 1- cup servings.
