Ground Beef Omelette

1/4 tsp minced garlic2 tbsp chopped onion2 tbsp chopped green onion2 tbsp green pepper chopped1/2 cup diced celery1/2 cup cooked lean ground beef2 tbsp salsa or chopped tomato6 large eggsSaltBlack pepper
Spray a large pan with cooking spray
Whisk the eggs in a bowl and set aside
Fry onions garlic, and green pepper on medium heat until onions are soft
Add chopped celery to the onion mixture and continue frying on medium heat
Add the salsa or chopped tomatoes to the pan and fry for about 30 seconds
Season with salt and pepper to taste
Reduce heat to low and pour the whisked eggs in the pan
Continue cooking the eggs on low heat, then flip the omelette to cook the top side
Cut into 6 pieces and serve warm

This was really very good. I eliminated two egg yolks (kept the whites) and put my cooked hamburger in boiling water and strained well to eliminate more fat before I added it back into the vegetable mixture. I also didn't have any bell pepper but subbed a half jalapeno which gave it a mild heat. - 9/14/15
