Cheesy Zucchini roll
- Number of Servings: 4
Ingredients
Directions
4 large square wraps Azumaya brand 2.5 oz Lucerene RF Cheddar (3/4 C once shredded) 1 3/4 C shredded zucchini (2 small zucchini) Garlic Powder to taste
Shred zucchini and cheese then mix together in a bowl and add garlic powder. Once completely mixed, try and drain any excess water out of the bowl. Then scoop 1/4 C into the center of the won ton wrapper, moisten perimeter with water then fold one corner up to the center, then fold the 2 sides in towards the center and roll to make it into a roll (directions with picture are on the back of the package).
Preheat oven to 350.
Lay the rolls on a cookie sheet sprayed with non-stick cooking spray (I use Olive Oil Pam). Spray the tops with a bit of cooking spray and sprinkle with chili powder. Bake for about 7 minutes then flip and back for another 7 or until just turning golden brown then broil for 1-2 minuets. They may leak a but because of the water from the zucchini. Let cool on a cooling rack and serve.
*WWP: 1 (since zucchini is zero only the points from the wrapper count)
Number of Servings: 4
