3 breast, bone and skin removed Chicken Breast (cooked), no skin, roasted 2 cup Beans, black 1 fruit without skin and seeds Avocados, California (Haas) 16 oz Tomato, grape (3oz = appro 12 tomatoes) 2 tbsp chopped Scallions, raw 2 tbsp Cilantro, raw 2 lime yields Lime Juice 1 tbsp Extra Virgin Olive Oil 1 tsp Cain's ground cumin (by MAMAHOYT) 3 medium (approx 2-3/4" long, 2- Peppers, sweet, red, fresh
1) Slice 3 bell peppers in half lengthwise and remove seeds.
2) Preheat oven to 375 degrees
3) In a large bowl Combine ingredients, scoop into peppers.
4) Bake at 375 for about 15 minutes until just heated through.)
Tips:
-Roast the chicken at 350 for 20-25 minutes until cooked.
-If using canned black beans, be sure to rinse them first.
Serving Size: 1/2 pepper stuffed
