NO BAKE Quinoa Peanut Butter Cups

Ingredients
1.5 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry .5 cup Peanut Butter, smooth style, with salt 8 tbsp Coconut Butter (by NUNGIE) 2 tbsp "LouAna" Pure Coconut Oil 1.5 tbsp Maple Syrup 4 tbsp Coconut, shredded sweetened
Directions
Rinse 1 1/2 cups quinoa until water runs clear. Let drain in sieve. Put peanut butter, coconut butter and coconut oil in medium saucepan and melt together stirring or whisking constantly. Remove from heat. Add maple syrup (or sub honey) and stir thoroughly. Mix quinoa into sauce. Add coconut. It should not be runny. Prepare a 12 hole cupcake pan with liners and put mixture evenly into each liner. Put in refrigerator or freezer to set up.. Keep refrigerated in covered container. Lasts about 10 days. You could freeze extras and enjoy when you feel the need for a healthy sweet.
