Garlic-Pecan Trout

Ingredients
2 dressed and cleaned trout2 teaspoons butter2 cloves garlic, minced2 ounces pecan pieces
Directions
Spray grill and fish with Pam and grill the fish until white and flakey. This is easiest when you used cleaned trout that has NOT been filetted, because the skin helps hold the delicate fish together. You can remove the skin and bones after cooking. If you have no grill, use the broiler pan in your oven. In the meantime, melt butter in a small pan, adding pecans and garlic. Saute over medium heat, stirring frequently so the pecans toast, but do not burn. When the fish is cooked, top it with the pecan-garlic butter.

    The topping is more of just pecans coated in butter and garlic, rather than the sauce that it sounds like. But it was still tasty, really let the fish shine. - 8/10/07
