1.5 cup, chopped Onions, raw 3 clove Garlic 1 cup, chopped Carrots, raw 2 stalk, large (11"-12" long) Celery, raw 0.75 cup Orzo Pasta 1 tbsp Thyme, ground .25 tsp Pepper, black 1 cup Split Peas 4 cup Imagine Organic Vegetable Broth 0.5 cup Parmesan Cheese, grated 1 tbsp Extra Virgin Olive Oil
Bring a medium-size pot of salted water to a boil, add orzo and cook until al dente. Drain well.
Heat oil in pressure cooker and sauté onion, celery, garlic, and carrots for 5 minutes, stirring frequently. Add vegetable broth, split peas, thyme, salt and pepper to pressure cooker. Cover and bring up to pressure. Cook for 16 minutes.
Reduce pressure and remove lid. MAKE SURE PEAS ARE DONE. Once they are stir cooked and drained pasta into soup. Sprinkle with Parmesan cheese and serve. 4-6 servings
