Gazpacho

Ingredients
2 cups tomato juice2 small cans V8 Spicy Hot1 yellow bell pepper, diced2 stalks celery, diced3 small cucumbers, peeled and diced4 ripe roma tomatoes, diced1 tbsp olive oil1 tsp red wine vinegarsalt & pepper to taste
Directions
Combine all ingredients and chill for 3 hours before serving. Is delicious alone, or with avocado, cilantro, sour cream, or crouton garnish.
