Chickpea Salad (for sandwhiches)

538 grams Chickpeas (garbanzo beans) 2 stalks, large celery, raw (11"-12" long)0.5 medium (2-1/2" dia) Onion, raw or slightly browned1 large (7-1/4" to 8-1/2" long) Carrot, raw30 grams Sour cream, light Juice of 1 lime
Drain and rinse the chickpeas with a colander to remove excess sodium.
Then transfer to a bowl and mash with a fork. It's okay to have some whole chickpeas left. Add the sour cream and mix.
Finely chop the onions and soften slightly on a nonstick pan.
Finely chop the celery and grate the carrot.
Add all veggies to the chickpeas and mix.
Season with the juice of a lime, salt and pepper.
Enjoy between slices of toast with spinach (toast and spinach not calculated in recipe)
Serving Size: makes FILLING of 10-12 sandwhich, estimated
