Ingredients
4.0 oz Sweet Onion 2.0 tbsp chopped Shallots4.0 clove Garlic1 Can Black Beans - drained/rinsed 1.5 cup Spinach, fresh6.0 oz soy chorizo1.0 tbsp Extra Virgin Olive Oil1.0 Sweetpotato, 5" long
Directions
Chop onion, sweet potato, shallot, and garlic. Heat large skillet or wok on med-high heat, add olive oil, onions, and sweet potato, cover for two minutes. Stir in spinach, black beans, garlic, shallot, and soy chorizo, cook stirring frequently for additional 8-10 minutes. Serve immediately.
