Red Velvet Mini Cheesecake

Ingredients
12 oz Cream Cheese .5 cup Granulated Sugar 1 tsp Vanilla Extract 1 tbsp Sour Cream 3 tbsp Cocoa powder - Hershey's Special Dark 1 large Egg4tsp red food dye Crust10 Oreo Cookies 2 tbsp Butter, unsalted
Directions
Crust: in a food processor, pulse oreos until fine, mix in melted butter. Spoon evenly into 12 cheesecake cups and press down. Bake at 350 for 5 minutes.
Mix remaining in large bowl, adding egg last. Divide into 12 cups. Bake 15 minutes. Cool completely before serving
