Cheesy Broccoli & Brown Rice Casserole

1 cup dry brown rice (long grain)2.5 cups chicken broth, 99% fat free, 50% less sodium (Substitute low sodium vegetable broth to make this vegetarian)3 cloves garlic1 lb frozen broccoli8 oz Velveeta, cut into small cubes
Bring broth to boil. Mince garlic cloves and add to broth. Add brown rice and stir once. Cover, reduce heat and simmer for 45 minutes until tender.
(Don't peek at rice while it simmers!)
While rice is cooking, thaw broccoli. Chop broccoli finely and set aside.
Add cubed Velveeta and chopped broccoli to hot, cooked rice. Stir to completely combine. (Most of the cheese should melt.)
Scoop rice mixture into a small, ungreased casserole dish and spread evenly.
Bake uncovered in 400 degree oven for 15 minutes.
Makes 10 half-cup servings.

I made this tonight for my family and added two poached chicken breasts to it to make it a more complete meal. Everyone in my family (two year olds included!) enjoyed it, even though my hubs added more Velveeta to his. I have to admit, it could be cheesier, but then it would be higher in calories! - 1/12/11

This dish was great!! I got half way through the cooking process only to discover I was out of cooking gas so i finished it in the microwave and it was still delicious I also used fresh broccoli and cooked it first instead of frozen. am not a huge fan of wheat rice but the cheese made it yummy!! - 9/16/10
