Strawberry Oatmeal Bar

1 cup Quaker Oats Old-Fashioned Rolled Oats 16 tsp Domino Light Brown Sugar .25 tsp Ginger, ground 0.25 tsp Morton Iodized Salt (by KELLYMK815) 6 tbsp Smart Balance Buttery Spread .33 tbsp Argo Cornstarch 1 tbsp Lemon juice 3 tsp Granulated Sugar 2 cup, halves Strawberries, fresh 0.75 cup Whole Wheat Flour
1. Preheat oven to 350 degrees. Line an 8 x 8 pan with parchment paper so the paper hangs over the sides like "handles"
2. In a medium bowl, combine the oats, 3/4 cup flour, brown sugar, ginger, and salt. Pour in melted butter or coconut oil and stir until it forms clumps and the dry ingredients are evenly moistened. Set aside 1/2 cup of the crumble mixture, then press the rest into an even layer in the bottom of the prepared pan.
3. Scatter half of the strawberries over the crust. Sprinkle the cornstarch evenly over the top, then sprinkle the lemon juice, and 1/2 tablespoon of the sugar. Scatter the remaining berries and then the remaining 1/2 tablespoon of sugar. Sprinkle the reserved crumbs evenly over the top. You will have some fruit showing through.
4. Bake the bars for 35-40 minutes, until the fruit is bubbly and the crumb topping smells toasty and looks golden. Place on a wire rack and cool completely or you can speed the process by putting it in the refrigerator.
