Ingredients
1/2 cup crushed Blue Diamond Nut Thins Almond1 large egg beaten1/2 Garlic powder 1/2 tsp Onion powder 1 large onion, sliced half inch slices1/3 cup Arrowroot flour 100% extra virgin olive oil cooking spray
Directions
Mix the nut thins (crushed like panko bread crumbs), and 1/3 arrowroot powder and seasonings. Dip onion ring in the egg, then in the dry mix. Place on parchment paper on a cookie sheet. Spray the tops of onion rings with olive oil. Flip over and spray the other side. Bake at 400 for 20-30 minutes. Salt as desired before serving.
