Black Bean Quesadilla

15oz can of black beans 1/2 fresh tomato, diced1/4 fresh green pepper, diced1/4 fresh red pepper, diced1/4 onion dicedMission 8" flour tortillaslow fat cheddar cheese, shredded.low fat sour creamyellow corn, fresh, canned or frozen.
Drain the black beans, mix the beans, tomatoes, peppers, and onions in a sauce pan. Heat to boiling & cook for 15 min, stirring frequently.
Turn on the broiler, lay out your tortilla(s) on a baking sheet. Sprinkle 1oz low fat cheddar cheese on each tortilla. Spoon 1/2 cup of the bean mixture onto each tortilla, fold the tortilla over. Place the baking sheet under the broiler. When the top of the tortilla is light golden brown, flip & brown the other side. Cut into triangles & serve w/1 tbsp low fat sour cream as garnish, and 1/2 cup yellow corn on the side.
