Simple Lentil Soup

1 cup lentils 1 celery stalk - cut in 1/2" dice1 carrot, raw - cut in 1/2" dice1 bay leaf1 tsp dried thyme4 cup vegetable stock 2 cup (8 fl oz) Water, tap 2 tbsp Extra Virgin Olive Oil 1 medium (2-1/2" dia) Onions, raw - chopped 1 tsp Garlic - mincedSalt & pepper to taste
1. Put lentils, bay leaf, thyme, carrot, celery and stock & water in a deep skillet or medium saucepan. Sprinkle with salt & pepper. Bring to a boil, then reduce to low. Cook until lentils are tender (about 30 minutes).
2. While lentils are cooking, add olive oil to small pan (medium heat), add onion and cook until soft (about 5 minutes), then add garlic and cook about 1-2 minutes.
3. When lentils are cooked, take out bay leaf and stir in onion mixture. Adjust seasonings. Serve.
