700.0 Grams Wheat flour, white, bread, enriched30.0 Grams Olive Oil9.0 Grams Salt1.0 tsp Granulated Sugar2 tsp dried yeast420.0 mL Water, tap
Put all ingredients into bread machine in the order specified for your machine. My Panasonic is Yeast at the bottom, then flour, then the rest of the dried and finally the liquids. Set to Pizza setting and start.
When complete, empty onto floured surface and split equally into 20. Flatten each section with the palm of your hand then keep folding in on itself to form a elongated ball. Let rest for 10 mins.
Flatten each again with the palm. Of your hand and roll into pitta shapes fairly flat (no thicker than a £1 coin). Let rest for 10 mins if using white flour only. 15-20 mins if mixing with brown flour. Try not to let them dry out. Cover with oiled film if you prefer.
Bake in very hot oven (220-240°C) for 5-6 mins.
These keep really well in the freezer but get eaten pretty quick in my house.
