Kung Pao Chicken

Ingredients
Ingredients:2 whole chicken breasts, boneless skinless, diced very small (1/2" cubes)1 egg white1 Tbs soy sauce1 Tbs cold waterMix well and set aside for 30 minutesMix sauce:1 Tbs cornstarch1 Tbs soy sauce1 tsp white vinegar1 tsp sesame oil3/4 cup waterGreen onions, diced (1/4" slices)2 whole dried red chili peppers4 black shitake mushrooms, soaked 1/2 hour and diced1 cup cashews
Directions
Instructions:
In a wok or pan, heat 2 Tbs oil. Add chicken mixture. Stir until chicken separates and changes color. Remove from heat.

Heat 2 Tbs oil, brown 2 red chilies peppers w tips removed, until they turn dark red. Add diced green onions and the chicken and stir fry for 1 minute.

Stir in sauce mixture. Stir until thickened. Add cashews before serving. Serve with stir fried rice.
