Creamy Lemon Chicken with Asparagus

4 serving Schwans boneless skinless chicken breast 4 oz 2 tbsp Coconut Oil 3 clove Garlic .75 cup Coconut milk (light) 2 tsp Lemon Juice 'Real Lemon' 100% juice 3 cup Asparagus, fresh
1. Heat 1 tbsp of oil in a pan
2. Salt & pepper chicken
3. Add Chicken to the pan, cook approximately 3 minutes on both sides until the chicken is not quite cooked through.
4. Remove Chicken from Pan
5. Add remaining 1 tbsp of oil to pan.
6. Add Minced garlic and asparagus that has been cut into 1 inch pieces, cook until the asparagus is crisp and the garlic is fragrant (approximately 10 minutes)
7. Add cocunut milk and lemon juice to pan, stir
8. Add Chicken back to pan, cover, reduce heat to low and simmer approximately 10 minutes until the chicken is cooked through.
Serving Size: 4 oz of Chicken Breast with 3/4 Cup of Asparagus and 1/4 cup of Cream
