Asian Spring Roll

Ingredients
0.25 gram(s) 100% Extra Virgin Olive Oil Cooking Spray (by AMENICE15) 1 serving Cereal - Rice Paper (Banh Trang) (1 serving = 22cm sheet) (by A_YELLOWPENGUIN) .375 serving Indian, Aromatic Basmati Rice, aprox 3/4 cup .06 cup Cheese, Mozzarella Cheese, Fat/Free, Shredded Kraft .06 cup, chopped Carrots, raw .08 serving Cellery, Raw -1 Stalk, large (11" - 12" long) (64g) (by REBECCAF62) .03 cup Baby Spinach (raw)
Directions
1. Cook the rice
2. Arrange your ingredients in a line like an assembly line.
3. Bring a sauce pan with 2 cups of water to a boil and turn down to simmer/warm.
4. On a dinner plate, spritz a bit of olive oil (this is your work surface). You can also use a cutting board.
5. Dip the rice paper into the water to soften. Use tongs, the water is hot. Tong in one hand to bring an edge out of the water and use the other to assist in pulling it out without it folding and sticking all over itself.
6. Lay it flat on your work surface.
7. Onto the rice paper, just under center add:
a. 1 heaping tablespoon rice
b. A pinch of cheese
c. 6 carrot match sticks
d. A few pieces celery
e. 2 spinach leaves
f. OPTIONAL: a small wedge/spear of meat.
8. Fold in the edges on both sides covering the outside ends of the rice et al.
9. Starting at the bottom, turn up the paper to cover the bottom edge of the rice et al.
10. Roll away from you and voila! You’ve got a Spring Roll.


Serving Size: makes 1 spring roll. 2 cups rice makes approx. 25 rolls.
