1/2 c chopped onion2 medium potatoes, diced2 tbsp Extra Virgin Olive Oil 1 1/2 cup, chopped Kale 4 large Egg, fresh, whole, raw salt & pepper to taste
dice spuds, microwave for 1.5 mins
chop onions
add onions and spuds to hot cast iron skillet with oil, cook, stir occasionally
add kale, sprinkle with water, cover and let steam
uncover, stir, break eggs into each quadrant of the skillet
sprinkle with more water, cover, low heat to finish
