Scrambled Tofu Burritos

Ingredients
9 serving Alejandro's Whole Wheat Tortillas2 tbsp ghee or coconut oil1 medium red onion1 large red bell pepper2 cup Spinach, fresh 15 oz (1 package) Trader Joe’s Organic Sprouted Tofu1 tsp sea salt1 tsp garlic powder1 tsp cumin powder1/2 tsp chili powder1 tsp turmeric
Directions
Dice red onion and red bell pepper, sauté in butter until soft but not browned; remove from heat, set aside. In same pan, add crumbled tofu, sauté until slightly browned. Add spices to 2-4 tbsp water to make a sauce, pour over tofu, cook off excess moisture. Add onion and red bell pepper until mixed. Remove from heat, add chopped spinach. Salt to taste. Fill each burrito with 2 spoonfuls of mix, roll, wrap in foil and freeze.

To reheat, remove from foil, microwave for 1 min, flip and heat for 30 sec-1 min more.
