Bruschetta Topping

-4 roma tomatoes, finely chopped-1 1/2 tbsp olive oil-2 tbsp balsamic vinegar-1/4 c shredded parmesan cheese (fresh)-2 cloves garlic, minced-1 tsp dried basil1/2 tsp dried thyme1/2 tsp dried oregano1/4 tsp dried rosemary1/4 tsp dried sage1/4 tsp fresh cracked pepper
-Rinse chopped tomatoes and drain well in colander. (try to get rid of seeds as much as possible) Set tomatoes aside.
-In a small bowl, combine olive oil, vinegar, cheese, garlic and spices.
-Toss tomatoes with mixture. You can prepare this recipe up to this point and keep for 1-2 days in the refrigerator.
-Preheat broiler
-Slice baguette into thin (3/8 to 1/2 in.) slices. Arrange slices in a single layer on a baking pan.
-Broil 1-2 min. per side. WATCH CLOSELY during this step!
-Top each slice with a modest spoonful of the mixture and serve. (You can also serve baguette slices and topping separately, so that they don't get soggy.)
-Enjoy!
