Tess's "Chickenpea" Salad

1.75 cup Chickpeas (garbanzo beans) 2 tbsp Follow Your Heart Grapeseed Oil Veganaise, egg free, dairy free (by JOCHEBED1) 1 tbsp Pickle Relish 1.5 tsp Gulden's Brown and Spicy Mustard .25 cup, chopped Onions, raw .4 cup, quartered or chopped Apples, fresh with skin .5 tsp Parsley, dried .25 tsp Cumin seed .25 tsp Garlic powder .25 tsp Chili powder .25 tsp Paprika 0.25 cup Cranberries, dried, sweetened (craisins)
1. Rinse and drain one can of chickpeas.
2. Place drained chickpeas and condiments (mayo, relish, mustard) in a medium-sized bowl with a flat bottom and mash slightly with a potato masher or heavy fork.
3. Add spices, salt and pepper to taste. Serve with whole-grain crackers or vegetable chips.
Serving Size: Makes four 1/2-cup servings
