Whole Wheat Banana Bread

Ingredients
2 c. white whole wheat flour3/4 c. Splenda1 c. 1% or skim milk4 very ripe bananas, mashed1 egg1/3 c. unsweetened applesauce3 tsp baking powder1 tsp. baking soda1/2 tsp. salt1 tsp. vanilla extract1 tsp. ground cinnamon
Directions
Mix wet and dry ingredients separately, then add them together and mix.


Spray a bread pan with cooking spray so that it doesn't stick, and fill with all the batter. I use a 9" loaf pan.


Bake in a preheated oven at 350 degrees for 55-65 minutes.


The top should be golden. Use a toothpick or knife to test for doneness. You may see banana on the knife, but there should be no batter. The sides should be loose from the pan, although you may need to loosen it a bit with a butter knife.


So moist and that you don't need (or want) to butter it or anything! Great for people who like baked goods but have a hard time avoiding the bad stuff. Just heat it up a little the next day if you like it warm. Makes 8-10 slices depending on how thick you like it.
