Mediterranean Watermelon Skewers

Ingredients
1 cup Beans, pinto or fava2 cup Arugula 2 large Scallions, raw 1 tbsp Extra Virgin Olive Oil 8 oz Feta Cheese 1 dash Salt 1 dash Pepper, black 1 medium Watermelon1/2 cup Balsamic Vinegar Bamboo Skewers
Directions
- Remove watermelon from rind and cut into 2-inch square sections (about 20). Divide watermelon pieces evenly and place on four skewers.

Grill:
- Place skewers directly on grill grate and cook, turning 2 or 3 times, until light grill marks appear.

Assemble & Serve:
- On each plate, start with a bed of arugula, then divide up evenly among the plates the beans, scallions and feta.
- Shake on a little salt and pepper.
- Rest 1 grilled watermelon skewer over top of salad on each plate.
- Drizzle the balsamic and olive oil over skewer and greens.
- Serve
