Homemade Mayonnaise

Ingredients
1 large egg1 cup olive oil2/3 tsp lemon or lime juiceSalt
Directions
About the oil, it’s very important that you use light tasting olive oil and not full flavour. That latter is way too strong for the mayonnaise!
And what’s ever better is you can flavour your mayo whichever way you like too.
You could very well add a teaspoon of Dijon mustard to it or minced garlic or horseradish.
