Couscous and Veg

Ingredients
1 cup Whole Wheat Couscous1 tbsp Extra Virgin Olive Oil2 tbsp Garlic Powder1 Green Pepper, chopped10 baby Carrots, chopped1/2 tomato, chopped1/2 cup Fresh Spinach1/2 cup Lemon Juice2 tbsp Basil
Directions
Prepare couscous as per package instructions. Set aside.
Add olive oil and garlic powder to frying pan. Add carrots, green pepper to start cooking first. Add tomatoes after a couple of minutes. Stir and let simmer together.
Stir in prepared couscous and spinach.
Stir in lemon juice and basil.
Make sure mixture is heated through, then serve.

I divided it into 3 equal portions.

    This was my first attempt at couscous and it turned out amazing! I also went with the advice to only use 2tbs of lemon juice and it added the perfect amount of zing! I added in the feta and it was perfect - even my 10 and 8 year old sons liked it! - 7/18/10

    I only used 3 T lemon juice after reading the previous recommendations. I also only used 1T basil. I used, zucchini, spinach, and tomatoes for my veggies, and about 1/3 cup lowfat feta. Turned out tasty - 2/9/09

    I completely agree with the person below that there is WAY too much lemon juice in this recipe. Next time- I will use 1-2 T instead of a 1/2 cup. I also used fresh garlic and added some other veggies. Thanks for sharing. - 7/13/08

    I thought this recipe was pretty good, but there is WAY too much lemon juice. It is a great way to get some veggies in!! I will make it again and use less lemon juice...even my husband thought it was okay!! - 7/7/08

    I love it and will make it very often. It is quick and simple. The only change I made was that I used fresh garlic. You can use any vegs that you have on hand. - 5/25/08
