Sopa de Ajo (Garlic Soup)

Ingredients
2 tbsp Olive Oil2 Cups cubed french bread (whole wheat)One head of fresh garlic (8-9 cloves)5 Cups Low-fat , low sodium chicken broth.5 tsp Cayenne pepperSalt, to tasteFresh Parsley or Parmesan Cheese (optional)
Directions
Cut bread into 1/2 inch cubes.
Thinly slice garlic cloves.

In a heavy soup pot, add olive oil and cook garlic and bread cubes until brown, 3-5 minutes. Add cayenne and salt to taste. Cook another 1-2 minutes. Add chicken stock and bring to a boil. Turn heat down and simmer 15 minutes. Puree soup using an immersion blender, or by ladeling into a traditional blender. Serve sprinkled with fresh parsley or parmesan cheese.

    I'd rather not puree the soup... I add cured ham (jamon serrano iberico) and and egg to make it a full meal. - 10/13/12
