Mock Potatoes

Ingredients
1 head, large (6-7" dia) Cauliflower, raw .25 cup Yogurt Plain Greek Yogurt, non-fat
Directions
1. Chop cauliflower and place in boiling water for about 15 to 20 minutes or until fork tender.
2. Drain cauliflower and pour into food processor or blender.
3. Add plain yogurt and pulse processor until you have mashed potato consistency.
4. Salt and Pepper to taste
