Veggie Lentil Soup

Ingredients
1 cup Vegetable Broth2 large, grated carrots, sliced1 large onion, chopped1 can red lentils (14 oz.)1 can diced tomatoes (28 oz.)1 zucchini, sliced2 tbsp. Thyme (or to taste)2 tbsp. Black Pepper (or to taste)
Directions
In large saucepan, heat olive oil. Add veggies and sautee for 5 min. until tender.

Add vegetable broth, lentils, tomatoes and spices. Stir and let simmer for 25 min.
