Peach Chicken Curry

Ingredients
1 cup, chopped Onions, raw 3 tsp Ginger Root 48 oz Chicken Tyson All Natural BoneLess SkinLess Chicken Breasts (GS) 0.25 cup Flour - Gold medal all purpose flour 2 tbsp Curry powder 1 tsp Salt 0.25 tsp Ground Cayenne Pepper (Powder) (by HALLVA) 4 tbsp Extra Virgin Olive Oil 2 clove Garlic 74 gram(s) bell pepper, red, sweet, raw 4 cup Swanson Chicken Broth 99% Fat Free 2 serving Average Roma Tomato (by RUCGIEB) 1 medium (2-1/2" dia) (approx 4 Peaches, fresh 1 fruit (2" dia) Limes 3 tbsp Cilantro, raw 3 tbsp Basil
Directions
chop garlic, ginger, onion, bell pepper, tomato, and peach. set tomato and peach aside
chop chicken into small pieces and dredge in flour, curry, salt, and cayenne
add 1-2 tbs in pan and cook chicken on medium high until browned and set aside
add ginger, garlic, onion, and bell pepper and cook 4 minutes
add back chicken and add broth. simmer until broth is reduced by 1/4. add tomato and peach and simmer until heated through.
remove from heat and add lime, cilantro, and basil.
serve over rice
