Slow cooker basil chicken in coconut curry sauce

2.0 tbsp Curry powder2.0 tbsp Basil8.0 Chicken thighs, bone and skin removed 1.0 head, medium (5-6" dia) Cauliflower, raw8.0 clove Garlic2 Tbsp Ginger Root1.0 large Onions, raw4.0 tbsp Cilantro, raw3.0 cup Canned Goods: Thai Kitchen Organic Coconut Milk (13.66 oz can)1.0 tbsp chili paste1.0 red bell pepper
Cube chicken and chop onion, cauliflower, and cut 1 red bell pepper into thin strips and and add onions, peppers and cauliflower to the bottom of the crock pot then chicken then mix minced garlic minced ginger root curry powder chili paste and coconut milk. Pour over the chicken and stir. Cook on low 6 hours. Add chopped basil and cilantro and heat 30 more minutes. For paleo serve with cauliflower rice or regular rice if not.
