Ingredients
0.75 cup 365 Organic Quinoa 1.5 cup Vegetable Broth 3 serving Brown rice (1 cup cooked) 1 cup, chopped Carrots, raw 3 ear, medium (6-3/4" to 7-1/2" long) yields Sweet Corn, Fresh 1 cup Black Beans - canned - Kroger 20 serving Cherry Tomatoes, Fresh, 1 Tomato 2 tbsp Olive Oil 1 cup, chopped Onions, raw
Directions
Cook rice. Use saucepan to cook quinoa in vegetable broth with garlic and onion. Cook corn and carrots. Mix all ingredients together with cumin, cayenne and salt and pepper. Serving Size: Makes 5 meal bowls
