4 oz Chicken Breast Tenders; Just Bare Chicken 1 cup (1" cubes) Eggplant 3 tbsp Extra Virgin Olive Oil 5 slices (1" dia) Ginger Root 1 tsp Pepper, red or cayenne 1 tbsp Soy Sauce 1 tbsp Vinegar - Natural Rice Vinegar (Nakano) 1 tbsp Eden Selected Toasted Sesame Oil 0.25 cup Potato flour 0.25 tsp Salt 0.35 tsp Pepper, black
Directions
Sauté floured chicken in oil oil with fresh ginger and seeded red pepper Sauté eggplant add soy sauce, sesame oil and mirin Combine with chicken and cook for 2 minutes
