Ham and Cheese Quiche w/Sweet Potato crust

Ingredients
2 sweetpotato, 5" long Sweet potato 3 cup Baby Spinach (raw) .5 cup, chopped Onions, raw 2 cup, diced Ham, extra lean, (5% fat) 6 serving Egg white, large 4 fl oz Heavy Whipping Cream 112 gram(s) Cheese, Cheddar, Sharp White, Shredded, SR (by DLROSE51)
Directions
Thinly slice sweet potatoes, mandolin is easiest. Line a sprayed pie dish with sweet potatoes, several layers including the sides. Bake at 350 for 25 minutes. Saute onion until translucent, add spinach until wilted, set aside. Beat eggs with heavy cream in a separate bowl. Once sweet potatoes are done, carefully place wilted spinach and onions on top of "crust" place ham on top of spinach, sprinkle with cheese then top with egg mixture. Bake at 400 for 25 minutes, until eggs are set. Let set for 5 minutes, cut and serve.
