Simple Lentil Daal

Ingredients
1 cup Lentils 1 tbsp Curry powder4 cup (8 fl oz) Water, tap 1 1tsp Coconut Oil 1 medium whole (2-3/5" dia) Red Ripe Tomato diced 1/2 an onion, diced 1 tsp Ginger Root diced1 clove Garlic diced
Directions
Boil lentils with water and seasoning for 20 minutes. Sauté remaining ingredients in coconut oil for 3-5 minutes or until soft, add to lentils and cook till it thickens up.
