Tink's Italian Stuffed Mushrooms

Ingredients
1 can minced clams, reserve 1/4 c. juice1/2 cup whole wheat bread crumbs1/2 onion, minced1 T minced garlic1 T Italian seasoning24 Mushrooms, stems removed (approx. 16 oz)2 T Parmesan Cheese, grated1 Egg, lightly beaten1 oz. Mozzarella Cheese, part skim milk, shredded
Directions
Preheat oven to 350 degrees. Mix all ingredients except mozzarella and mushrooms. Arrange mushrooms in a baking dish, pie plate or shallow casserole. Stuff each mushroom with a spoonful of filling, making a small mound over the top. Bake for 20 minutes. Remove mushrooms from oven, sprinkle with mozzarella, then return to oven for 5 minutes or until cheese is melted. Drizzle with a touch of olive oil, if desired. Eat as an appetizer or a full meal.
