Low carb sausage mushroom 'stuffing'

1 cup, chopped Onions, raw 2 tbsp Olive Oil 1.5 cup, pieces or slices Mushrooms, fresh 10 oz Tennessee Pride sausage roll 4 fl oz White Wine 1 tbsp Butter, salted Salt and pepper to tasteChopped fresh parsley to taste
Sauté onion in oil until caramelized. Turn heat up to med/high and add mushrooms. Sauté until crisp on edges about 10-15 minutes. Season with salt and pepper. Turn heat to high and add wine. Let wine cook off and let simmer while cooking sausage in deprecate pan until browned Drain sausage. Combine sausage with mushrooms Remove fro heat and add butter and let melt through. Add chopped parsley at end
