Tina's Stuffed Cabbage Soup

Ingredients
1 pound extra lean ground beef1 large onion1 bag cole slaw mix (cabbage, etc)1 Tablespoon olive oil1 large carton Pacific beef broth or 2 cans beef broth1 teaspoon salt (or more to taste)1/4-1/2 cup brown sugar1 tablespoon lemon juice1 large can crushed tomatoes in puree1/3 cup raw brown rice
Directions
In Dutch oven or large soup pot, brown ground beef and onion; in same pan, add bag of cole slaw mix (cabbage) and olive oil. Cover and cook on medium 4 minutes. Add remaining ingredients except rice. Bring to boil and then add rice. Cover and cook on medium for 45 minutes.
