Carrot Loaf (No Added Fat or Sugar)

200 mL Orange Juice 100 gram(s) Sultanas 200 grams Carrots, raw 2 large Egg, fresh, whole, raw100g Pecans 1 tsp Baking Powder 225 gram(s) Allinson Self Raising Wholemeal Flour 5 gram(s) Mixed spice, Schwartz (uk) 60 gram Almond Milk, Almond Breeze Reduced Sugar, Fresh
1. Soak sultanas in orange juice for 2-3 hours
2. Add grated carrots, milk and beaten egg and mix well
3. Add chopped pecans and stir
4. Add wholemeal flour, baking powder and mixed spice.
5. Stir well and spoon into a well lined 2lb loaf tin. The tin must be lined otherwise the cake will stick as there is no fat in the recipe.
6. Bake for 45-55 minutes at 180C/350F, until skewer comes out clean.
