coconut and tomato sauce for salmon

Ingredients
2 tsp Oil 400g canned tomatoes 2 tbsp tomato puree 5g chilli flakes1 Knorr Chicken stock cube 400 grams Coconut milk, reduced fat - Asda 150 grams Broccoli, raw100 grams red pepper, raw200 grams Carrots, raw 300 grams Onions, raw 3 grams Granulated Sugar
Directions
Fry onions in oil, chilli and salt. Add tomato purée and fry off. Add tinned tomatoes coconut milk, fish sauce and sugar. Bring to the boil and lower to a simmer, add greens - 20 minutes. Add salmon - gently poach 6-8 minutes. Remove salmon. Thicken the sauce with cornflour if necessary.
