1.75 cup Flour - Gold medal all purpose flour 1 tbsp Cinnamon, ground 1 tsp Baking Soda 1 cup Pumpkin Puree- Libby's Easy Pumpkin Pie Mix (by SUGAR5783) 1 cup Granulated Sugar .5 cup, packed Brown Sugar 2 large Egg, fresh, whole, raw .5 cup Applesauce, unsweetened 1 tbsp Vanilla Extract 8 oz Cream Cheese .25 cup Granulated Sugar 1 serving egg yoke (by TROEDELTRADER) 2 tsp Vanilla Extract
preheat oven 375
in medium bowl mix flour pumpkin spice, baking soda, combine and set aside.
in large bowl wisk together pumpkin, sugar and brown sugar
beat in egg, applesauce, vanilla extract.
slowing mix flour mixture into liquid mixture
fill muffin tin 3/4 full.
medium bowl beat cream cheese until smooth
add sugar, egg yoke and vanilla, and beat until combined
top each muffin with 1 tbsp cream cheese mix
use toothpick to swirl batter
bake 18 - 20 minutes or until centre comes out clean
