Cocoa merengue kisses

Ingredients
4.0 large Egg white, fresh0.5 cup, unsifted Powdered Sugar0.5 cup Granulated Sugar0.25 cup Cocoa, dry powder, unsweetened0.5 tsp Vanilla Extract0.5 tsp instant espresso powder1/8t salt1/8t cream of tartar
Directions
Preheat oven to 250d. Froth eggs. Add salt, cream of tartar, vanilla, & espresso. Add sugar, 1-2T at a time. Add cocoa, 1T at a time. Pipe small mounds or drop by spoonfuls onto cookie sheets lined w/parchment paper. Bake for 1 hour, then turn off oven but do not remove and do not open door for minimum of 3 or up to 8 hours (or overnight).
