Ingredients
2Tblsp of Light Olive Oil1 cup chopped onion1/2 cup chopped green pepper2 tblsp of minced garlic1 lb lean ground turkey1 lb sweet Italian sausage2 16oz cans of diced stewed tomatoes6 cups of hot water2 10oz package of frozen mixed vegetables1 Tbsp of oregano2 Tbsp of basil, 4 Tbsp is fresh2 Tbsp of Chili powder (smokey flavor works best)1 tsp of cayenne pepper or a couple of dashes of Tabascos sauce1 Tbsp ground cinnamon1/4 tsp of ground cuminsalt and pepper to taste
Directions
Add olive oil to at stock pan and add medium heat. Add chopped onion and peppers and saute until tender, about 7 minutes, add minced garlic just before onions and peppers are tender. Brown ground turkey and sausage, sometimes I will use a hot Italian sausage to give it a bit more kick. If you used lean meat there should not be any liquid to drain. Once the meat is browned add your seasonings: salt, pepper, cayenne pepper, cinnamon, ground cumin, chili powder, basil, and oregano. Stir in you stewed tomatoes, water and frozen vegetables, bring to a boil and simmer for 30 minutes. A nice option to this soup, is to top it off with with a lite or fat free sour cream, just a dollop.
