Yogurt Garlic Mashed Potatoes

Ingredients
4 cups potatoes, peeled and cut into chunks1/2 cup milk2 tablespoons mince garlic1 1/2 cups plain yogurtSalt and pepper to taste
Directions
In a microwave-save dish, place potatoes and milk. Cover tightly and cook on high for about 12 minutes, potatoes should be tender but not mushy. In a separate bowl mix yogurt and garlic together.

When potatoes are done, remove from microwave. Add yogurt mixture and mash. Season with salt and pepper. Garnish with parsley.
