Vegetarian Split Pea Soup

2 tbsp EVOO1 large onion, coarsely chopped4 garlic cloves, minced4 packets Goya ham flavoring granules or 4 Knorr veggie cubes (optional)6-8 cups water1 16 ounce bag dried split peas, rinsed1 cup sliced carrotsSalt and pepper to taste
In large pot, cook onion in oil until soft. Add garlic and cook one minute more. Add all other ingredients except carrots. Bring to a boil, then reduce heat and simmer at least one hour, stirring occasionally, until peas become creamy. Add sliced carrots and simmer one additional hour. Add salt and pepper to taste
Makes approx. 8 very thick 1-cup servings. Add water to thin.
