Kale with Roasted Garlic and Mushrooms

2 bunches of kale, stemmed and torn into reasonable pieces1 bulb garlic, roasted (see instructions below)2 cups mushrooms, washed and slicedPepper to taste
Wrap the garlic bulb in aluminum foil and place it in the oven at 425 for 40 minutes. Allow this to cool so you don't burn yourself when you squeeze the delicious garlicky goodness out!
Meanwhile, sautee the mushrooms in a small amount of water until they're cooked, 5-7 minutes. Add the kale and cook, stirring frequently (I use tongs) until the greens are bright green and tender, around 5 minutes depending on your heat. When most of the water has evaporated from your pan, squeeze in the roasted garlic. Enjoy over rice or by itself! Makes four big servings.
