Sweet Relish

Ingredients
2 lbs cucumbers, diced2 lbs zucchini, diced1 large, sweet onion, diced½ large red pepper, diced¼ cup kosher salt2 ½ cups vinegar1 cup sugar½ tbsp mustard seed½ tbsp celery seed
Directions
Combine vegetables and salt in a large, fine strainer set over a bowl. Let stand 1 hour.
Drain and rinse, pressing the mixture against the strainer to remove all the excess liquid.
Transfer to a large pot and add the remaining ingredients.
Bring to a boil, then reduce heat and simmer 5 minutes.
Can 15 minutes.
