Everyday Dal - Madhur Jaffrey

1 cup Mung Beans .25 tsp Turmeric, ground 2 tbsp Olive Oil 0.10 tsp asafetida (by DEANNIE1966) .5 tsp Cumin seed 1 tsp Pepper, red or cayenne 3 tbsp chopped Shallots
Put dal in pot with 3 1/2 c water. Bring to a boil. Skim off the foam and add turmeric. Stir. Cover partially, turn heat to a simmer and cook 45 minutes. Add salt to taste. Turn off heat.
Pour oil into a small frying pan and set over medium heat. When hot, add asefatida, cumin seeds and chilies, quickly, in that order. As soon as the chilies darken, add the shallots. Stir and cook until the shallots brown and then quickly pour the contents over the cooked dal. Serve immediately.
